easy four-ingredient guacamole

There's so much that can go in guacamole—tomatoes, jalapeños, garlic, cilantro—but my no-frills, no-fail guac has just four ingredients: avocado, onion, lime juice, and salt.


I whip this stuff up at least once a week, and it's always creamy, balanced, and delicious for dipping tortilla chips or filling tacos.



One avocado makes enough for two casual dippers. Then I add a heaping tablespoon of diced red onion, a teaspoon of lime juice (that's about two wedges), and a generous pinch of salt.


Here's the most important part: you might be tempted to use a whisk or fork to mash up the avocado—don't do it. In my opinion, this destroys the texture of the guacamole. Instead, use the edge of a spoon to cut into the avocado. Scoop, fold, mash, and repeat. Be patient; it'll eventually become irresistibly creamy. If it's not coming together, add a little more lime juice and keep stirring.
